Salad Ingredients
- 2 cups arugula
- 2 large avocados
- 1 cup cherry tomatoes
- 1 cup fresh mozzarella cheese
Dressing

- 1 tablespoon balsamic honey vinegar
- 1 tablespoon lemon juice
- ½ teaspoon ground black pepper to taste

Preparation
In a small bowl, whisk the olive oil, honey balsamic vinegar, salt, pepper, and lemon juice together. Set the dressing aside.
Dice the fresh mozzarella and avocados into strips. Slice the cherry tomatoes in half.
