Ingredients
  

Dough

  • ¾ cup whole milk plus more for brushing the edges
  • 4 tablespoon unsalted butter
  • 2 teaspoon active dry yeast
  • ¼ + 1 teaspoon granulated sugar
  • 3 cups all purpose flour
  • ½ teaspoon salt
  • 1 each egg room temp.
  • 2 teaspoon vanilla extract

Spiced Apples

  • 2 medium apples peeled & cubed
  • cup brown sugar
  • 4 tablespoon unsalted butter
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 tablespoon water
  • ½ teaspoon cornstarch

Cheesecake filling

  • 4 oz cream cheese room temp.
  • 2 tablespoon powdered sugar
  • 1 teaspoon vanilla extract

Cinnamon Streusel

  • 2 tablespoon all purpose flour
  • 1 tablespoon unsalted butter cold & cubed
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar
  • ¼ teaspoon cinnamon

Vanilla Icing

  • ½ cup powdered sugar
  • 1 tablespoon milk
  • 2 teaspoon vanilla extract

Instructions
 

Dough Preparation

  • Microwave the milk and butter for 30 seconds until warm and melted. Add the yeast and 1 teaspoon sugar. Stir and let sit for 5 minutes until foamy.
  • In a stand mixer bowl, combine flour, ¼ cup sugar, baking powder, and salt. Add yeast mixture, egg, and vanilla. Mix until combined.
  • Mixer on medium speed, knead until dough forms a ball and then continue kneading at high speed for 10 minutes until smooth.
  • Transfer to an oiled bowl, cover, and let rise for 1 to 1.5 hours until doubled.
  • Divide dough into 8 pieces, roll each into a ball, then roll into a 3 inch flat circle.
  • Place circles on tray, cover, and let proof for another 30 minutes.

Filling Preparation

  • Make an indention in each circle using a cup. Brush edges with milk. Fill with 1 tablespoon cheesecake filling and top with apples. Sprinkle with streusel.
  • Bake at 350℉ for 20 minutes.

Apples Preparation

  • In a saucepan, heat apples, brown sugar, butter, lemon juice, and cinnamon. Cook for 7-10 minutes until soft.
  • Mix cornstarch and water. Add to apples and simmer until thickened, about 1 minute. Set aside to cool.

Cheesecake Preparation

  • In a bowl, combine cream cheese, powdered sugar, and vanilla. Beat at medium speed for 3-4 minutes or whisk by hand.

Streusel Preparation

  • Combine streusel ingredients until butter is pea-sized.

Icing Preparation

  • Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled buns.

Notes

If using instant yeast, skip the step of adding it in liquid and add it directly to your flour mixture.
