Equipment

Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • 1 tablespoon granulated sugar
  • 0.25 cups melted butter

For the cheesecake

  • 3 packages (24oz, 750g) cream cheese, softened
  • 2 cups plain Greek yogurt (or sour cream)
  • 1.25 cups granulated sugar
  • 2 teaspoons vanilla
  • 4 large eggs

For the apples

  • 3 cups peeled, sliced apples (about 3)
  • 0.25 cups granulated sugar
  • 1 teaspoon cinnamon

For the crumble

  • 0.25 cups all purpose flour
  • 0.5 cups rolled oats
  • 0.25 cups brown sugar
  • 1 teaspoon cinnamon
  • 0.25 cups melted butter

For serving

  • Salted caramel sauce (or regular caramel sauce, optional)

Instructions
 

Preheat the oven and make the crust

  • Preheat the oven to 325 degrees F.
  • In a small bowl, stir together the graham cracker crumbs and sugar.
  • Drizzle the melted butter over top and stir until everything is evenly combined.
  • Press the graham cracker crust evenly over the bottom of a 9” springform pan, and ½-1 inch up the sides.
  • Bake the crust for 10-12 minutes until it looks dry.
  • Remove the crust from the oven and let it cool.
  • Decrease the oven temperature to 275 degrees F.

Make the cheesecake

  • In a large bowl, with an electric mixer, whip the cream cheese until it is smooth and fluffy.
  • Add the Greek yogurt and whip briefly to combine.
  • Add the sugar, vanilla, and eggs, and whip just until the mixture is smooth.
  • Pour the cheesecake batter into the cooled crust, smoothing the top.

Prepare the apples

  • In a medium bowl, stir together the sliced apples, sugar, and cinnamon.
  • Spoon the apples over top of the cheesecake batter, spreading them out as evenly as possible.

Make the crumble

  • In a small bowl, stir together the flour, oats, brown sugar, and cinnamon.
  • Drizzle the melted butter over top of this mixture and stir until it is completely combined.
  • Sprinkle the crumble topping over top of the apples on the cheesecake.

Bake the cheesecake

  • Place the cheesecake pan on a baking sheet and bake at 275 degrees F for 1 ½ to 2 hours or until the center reads 150F.
  • Once it reaches 150F, turn off the oven, prop open the door, and let sit for an hour.
  • Take the cheesecake out of the oven and run a knife around the edge. Let cool completely on a wire rack.
  • Chill the cheesecake overnight in the refrigerator before slicing and serving.
  • Before serving, drizzle with salted caramel sauce if desired.

Notes

Make sure not to over-mix the cheesecake batter or it may rise in the oven and possibly spill over. Using an electric hand mixer on low speed helps.
