Salad Ingredients

  • 1 bunch kale destemmed & shredded
  • 1 large shallot thinly sliced
  • ½ lemon lemon juice
  • 1 medium delicata squash roughly 1 pound, deseeded & sliced into ½-inch cubes
  • cup pine nuts or chopped walnuts
  • cup shaved parmesan
  • cup Caesar dressing of choice

Squash Croutons

  • 2 tablespoons olive oil divided
  • ¼ cup panko breadcrumbs
  • ¼ cup grated parmesan
  • 1 clove garlic finely chopped or grated
  • 3 tablespoons fresh herbs finely chopped, such as rosemary, sage, or thyme
  • kosher salt to season
  • ground black pepper to season

Instructions
 

Salad Preparation

  • Preheat the oven to 425°F and prepare a baking sheet.
  • Place the cubed delicata on the baking sheet, drizzle with 1 tablespoon of oil, season, and toss.
  • Combine breadcrumbs, parmesan, garlic, and herbs in a bowl, drizzle with oil, and toss.
  • Spread the breadcrumb mixture over the delicata and press to adhere.
  • Roast for 20-25 minutes and toast the nuts in the last 3-4 minutes.
  • Massage the kale with shallots, salt, and lemon juice until vibrant and wilty.
  • Combine roasted squash, toasted nuts, and shaved parmesan with the kale, then drizzle with dressing and toss.
  • Serve immediately and enjoy!

Notes

Delicata squash is naturally sweet and its skin is tender enough to eat. Cubed butternut squash can be used as a substitute. This recipe can be made vegan by using dairy-free cheese alternatives.
