Ingredients
  

Chicken and Coating

  • 1 lb chicken breast (cut into bite-sized pieces)
  • 1 cup all-purpose flour
  • ½ cup buttermilk
  • 1 ea egg
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • ½ cup Panko breadcrumbs
  • 1 tablespoon vegetable oil

Bang Bang Sauce

  • ¼ cup mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon rice vinegar

Assembly

  • 12 ea slider buns
  • Fresh cilantro (optional for garnish)

Instructions
 

Preparation

  • In a bowl, whisk together the buttermilk, egg, garlic powder, onion powder, salt, and pepper.
  • Dredge the chicken pieces in flour, then dip them in the buttermilk mixture, followed by the Panko breadcrumbs. Make sure each piece is well coated.
  • Heat vegetable oil in a large pan over medium heat. Fry the chicken pieces for about 3-4 minutes per side, or until golden brown and crispy. Remove from the pan and drain on paper towels.
  • In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and rice vinegar to make the Bang Bang sauce.
  • Toss the crispy chicken pieces in the sauce, making sure each piece is fully coated.
  • Assemble the sliders by placing a piece of saucy chicken on each slider bun. Garnish with fresh cilantro, if desired.
  • Serve immediately and enjoy!

Notes

For a lighter option, you can grill the chicken pieces instead of frying them. Replace the chicken with crispy cauliflower bites for a vegetarian alternative. Adjust the level of spice in the Bang Bang sauce by increasing or decreasing the amount of sriracha and sweet chili sauce. If you’re looking to make these sliders low-carb or gluten-free, serve the Bang Bang chicken in lettuce wraps instead of buns. Store leftovers in an airtight container in the fridge for up to 2 days.
