For the Pasta
- 12 oz Radiatori Pasta or any short pasta
For the Roasted Garlic
- 2 bulbs Garlic roasting enhances sweetness
- 2 tablespoon Extra Virgin Olive Oil or any light vegetable oil
For the Sauce
- 2 tablespoon Butter brown slowly for richness
- 2 tablespoon Sweet Brown Miso Paste or white miso in a pinch
- 1 cup Heavy Cream or full-fat coconut milk for vegan option
- ½ lemon Lemon Juice optional, brightens the dish
- ⅓ cup Parmigiano Reggiano finely grated; nutritional yeast for vegan
For the Garnish
- 1 tablespoon Chives chopped, or substitute green onions
- ¼ cup Crispy Shallots fried onions can be an alternative
- Salt to taste
Cooking Instructions
Preheat your oven to 375°F. Slice off the tops of the garlic bulbs, drizzle with olive oil, wrap them in foil, and let them roast for 40-50 minutes until they’re caramelized and soft.
Boil a large pot of salted water. Add the radiatori pasta and cook until al dente, ensuring to reserve ¼ cup of the pasta water before draining.
Melt butter in a large sauté pan over medium heat. Stir frequently until it bubbles and transforms to a lovely caramel-brown color.
Combine the roasted garlic cloves, squeezed from their skins, with the sweet brown miso paste in the melted butter. Stir until well-blended.
Add the heavy cream and allow the sauce to simmer on low heat, letting the flavors meld beautifully together.
Toss the cooked pasta into the sauté pan along with the reserved pasta water, mixing until fully coated in the creamy sauce.
Optional: Stir in lemon juice and grated Parmigiano for an extra zing, adjusting with more reserved pasta water if desired.
Serve the pasta onto plates, topping with fresh chives, crispy shallots, and extra Parmigiano as desired.
