For the Chicken

  • 1.5 pounds boneless skinless chicken thighs
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons dark soy sauce optional for color and depth
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 tablespoons neutral oil (like canola or avocado oil)

For the Garlic Ginger Broth

  • 1 tablespoon sesame oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 3 cups chicken broth (low sodium)
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar optional
  • 2 green onions chopped

To Serve

  • cooked white or jasmine rice
  • fresh herbs (optional – cilantro or Thai basil)
  • sliced green onions or chili for garnish

Cooking Steps

  • In a bowl, toss the chicken thighs with soy sauce, dark soy sauce (if using), brown sugar, and honey. Heat a large skillet or pan over medium-high heat and add the neutral oil. Once hot, add the chicken pieces in a single layer, skin-side (or top-side) down.
  • Let the chicken sear undisturbed for 4–5 minutes. You want it to start caramelising and getting sticky and browned. Flip and cook the other side until nicely golden.
  • Transfer the caramelised chicken to a plate. In the same pan, reduce heat to medium and add sesame oil. Stir in the minced garlic and ginger, cooking for 1–2 minutes until fragrant but not browned.
  • Pour in the chicken broth, soy sauce, and sugar (if using), scraping up any caramelised bits stuck to the bottom of the pan. Bring to a simmer, then return the chicken to the pan. Cover and cook for 10–15 minutes, until the chicken is tender and the flavors are infused.
  • Remove the lid and let the sauce reduce slightly if you prefer a thicker broth. Taste and adjust seasoning if needed. Serve hot over steamed rice, ladling the garlic ginger broth over the top. Garnish with chopped green onions or fresh herbs for a burst of freshness.

Notes

Chicken drumsticks or wings also work well here, though cooking times may vary slightly. For a thicker sauce, simmer uncovered during the last 5 minutes. To make it vegetarian, use tofu instead of chicken and vegetable broth in place of chicken broth.
