Ingredients
  

Banana Bread

  • 290 g Ripe Banana
  • 75 ml Vegetable/Coconut Oil
  • 180 g Soft Light Brown Sugar
  • 1 teaspoon Baking Soda
  • 0.25 teaspoon Baking Powder
  • 195 g Plain White Flour

Chocolate Ganache Frosting

  • 200 g Melted Chocolate
  • 75 g Chocolate Hazelnut Spread
  • 75 g Peanut Butter

Preparation

  • Pre-heat your oven to 180°C/356°F. Grease an 8 inch baking tin with a small amount of butter and baking paper on the bottom.
  • Smash your bananas into a paste. Add the oil, sugar, baking soda, baking powder, and flour, mixing between each addition.
  • Pour the banana bread mixture into the greased baking tin. Bake for 30 minutes, or until a fork comes out clean.
  • Once cool, prepare your frosting by mixing melted chocolate, peanut butter, and hazelnut spread until combined. Chill for 45 minutes until firm.
  • Spread the frosting on top of the banana bread. Decorate with chopped banana and raspberries.
