Ingredients
  

For the Crust

  • 1.5 cups graham cracker crumbs from 12 whole crackers
  • 5 tablespoons unsalted butter melted
  • 2 tablespoons sugar
  • 0.125 teaspoon salt

For the Filling

  • 32 oz cream cheese at room temperature
  • 2 cups sugar
  • 3 tablespoons all-purpose flour
  • 4 teaspoons vanilla extract
  • 1 teaspoon packed lemon zest from 1 lemon
  • 2 teaspoons fresh lemon juice from 1 lemon
  • 0.25 teaspoon salt
  • 6 large eggs
  • 0.5 cups sour cream

Instructions
 

For the Crust

  • Preheat the oven to 375°F and set an oven rack in the lower middle position. Wrap a 9- or 10-inch springform pan with aluminum foil, covering the underside and extending to the top.
  • Combine the graham cracker crumbs, melted butter, sugar, and salt in a medium bowl. Press the mixture into an even layer at the bottom of the prepared pan. Bake for 10 minutes.

For the Filling

  • Reduce the oven temperature to 325°F and boil a kettle of water. In a mixer, beat the cream cheese, sugar, and flour until smooth. Scrape the bowl and add vanilla, lemon zest, lemon juice, and salt. Beat until just combined, then add eggs one at a time, mixing on low, and finally mix in the sour cream.
  • Ensure the oven is at 325°F. Place the cheesecake pan in a roasting pan and pour the batter on top of the crust. Add boiling water to the roasting pan. Bake for 1 hour 30 minutes to 1 hour 45 minutes, until set but slightly wobbling.
  • Cool in the water bath for about 45 minutes then refrigerate for at least 8 hours or overnight.
  • To serve, remove the sides of the springform pan. Transfer to a serving dish if desired and slice with a sharp knife.

Notes

Berry sauce can be served on the side, if desired. Make the cheesecake ahead of time and store in the fridge for up to two days, or freeze for up to three months.
