Ingredients
  

For the Broth

  • 4 cups Chicken Broth Low-sodium preferred
  • 1 can Coconut Milk Full-fat recommended
  • 3 cloves Garlic Minced
  • 1 inch Ginger Grated
  • 1 tablespoon Curry Powder
  • 1 teaspoon Turmeric
  • 1 tablespoon Fish Sauce
  • 2 tablespoon Lime Juice Add to taste

For the Chicken and Rice

  • 1 lb Boneless Chicken Thighs May substitute with chicken breast
  • 1 cup Long-Grain White Rice Or jasmine rice
  • 1 teaspoon Salt Adjust to taste
  • ½ teaspoon Black Pepper

For the Garnish

  • 2 each Lime Wedges
  • ¼ cup Fresh Cilantro Chopped
  • 2 scallions Green Onions Chopped

Instructions
 

Cooking Instructions

  • In a large pot, combine chicken broth, coconut milk, garlic, ginger, curry powder, turmeric, and fish sauce. Bring to a simmer.
  • Add in the chicken thighs and cook for 20 minutes, or until fully cooked.
  • Stir in the long-grain rice and cook for an additional 10 minutes or until rice is tender.
  • Adjust flavors with lime juice, salt, and pepper.
  • Serve hot, garnished with cilantro, chopped green onions, and lime wedges.

Notes

This dish can be customized with additional vegetables or spices as desired.
