Ingredients
  

For the Base

  • 1 cup Cottage Cheese full-fat for extra tenderness
  • 1 cup Oats quick or rolled oats
  • ½ cup Honey can substitute with maple syrup or agave
  • 1 cup Flour whole wheat is preferred

For Leavening and Flavor

  • 1 teaspoon Baking Powder ensure it's fresh
  • 1 teaspoon Cinnamon optional for added warmth

For Sweetness and Indulgence

  • ½ cup Chocolate Chips or substitute with nuts or dried fruits

Method

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Combine cottage cheese, honey, and other wet ingredients in a mixing bowl. Mix until smooth.
  • Whisk together the oats, flour, baking powder, and cinnamon in another bowl.
  • Gradually fold the wet and dry ingredients together until just combined. Fold in the chocolate chips.
  • Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them evenly.
  • Bake for 12-15 minutes, or until the edges are gold.
  • Rotate the baking sheet halfway through the baking time. Let cool on a wire rack.
