Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • ½ cup cranberry sauce homemade or low-sugar
  • 4 oz Brie cheese cut into small pieces
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions
 

  • Preheat oven to 375°F (190°C). Slice a pocket horizontally into each chicken breast, being careful not to cut through completely. Pat dry and season both sides with salt, pepper, thyme, garlic powder, and onion powder.
  • In a small bowl, combine cranberry sauce and Brie pieces until evenly mixed but slightly chunky.
  • Spoon the cranberry-Brie mixture into each chicken breast pocket and secure openings with toothpicks to prevent leaks.
  • Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3–4 minutes on each side until golden brown.
  • Transfer skillet to the oven and bake for 18–22 minutes, or until the internal temperature reaches 165°F (74°C). Rest for 5 minutes, remove toothpicks, and serve warm.

Notes

Use quality Brie cheese and don’t remove the rind—it enhances flavor and helps the cheese melt smoothly inside the chicken. Serve with roasted vegetables or mashed potatoes for a complete meal.
