Pasta Ingredients

  • 0.5 kg pasta such as tagliatelle, fettuccine or linguine
  • 1 clove garlic
  • 1 tablespoon butter
  • 200 g salmon fillet, skin removed
  • 125 ml dry white wine
  • 250 ml double/heavy cream
  • 80 g mixed greens such as spinach, arugula, watercress
  • 0.5 lemon zest and juice
  • 0.25 teaspoon salt or to taste
  • 1 tablespoon fresh parsley, chopped

Cooking Instructions

  • Cook the pasta in a large pot of salted boiling water according to package instructions.
  • While the pasta is cooking, remove the skin from the salmon fillet, check for residual bones, and cut into bite-sized pieces. Season with salt and pepper and sear on all sides in 1 tablespoon of butter in a large frying pan until cooked all the way through, about 2-3 minutes. Remove to a separate plate.
  • In the same pan, add 1 tablespoon olive oil, chopped shallots, and minced garlic; sauté over low heat for 1-2 minutes. Turn the heat to medium, add white wine, and let it reduce for 5-7 minutes. Then add the heavy cream, mixed greens, salt, lemon zest, and lemon juice. Mix to combine.
  • Add the drained pasta to the sauce and toss to combine. Top with seared salmon and chopped parsley before serving.

Notes

Reserve some of the pasta water before you drain the pasta to add later to the sauce. It adds both flavor and creaminess. Use a large skillet or frying pan over medium-high heat to sear the salmon. Tagliatelle is a good choice for holding the sauce. Use a dry white wine such as pinot grigio, sauvignon blanc, or chardonnay for best results.
