Ingredients
  

For the Crust

  • 4 large Yukon Gold potatoes, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons fresh thyme leaves
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • ¼ cup heavy cream

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C). Grease a 9-inch round baking dish.
  • In a large bowl, combine olive oil, balsamic vinegar, garlic, thyme, salt, and pepper. Add potato slices and toss to coat evenly.
  • Layer potato slices in the baking dish, overlapping slightly. Sprinkle Parmesan cheese between layers and pour heavy cream over the top.
  • Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until golden and crispy.
  • Let cool for 5 minutes, then slice and serve warm.
