For the Cheese Mixture
- 1 cup Cottage Cheese well-drained
- 1 cup Shredded Mozzarella Cheese or string cheese
- ½ cup Grated Parmesan Cheese omit for milder taste
- 1 large Egg or egg substitute
For the Coating
- ½ cup All-Purpose Flour or gluten-free flour
- 1 cup Panko Breadcrumbs or regular breadcrumbs
- 1 tablespoon Italian Seasoning or a mix of dried herbs
- 1 teaspoon Garlic Powder or fresh garlic
- Salt to taste
- Black Pepper to taste
For Cooking
- Oil Spray or Oil for Frying, olive oil or canola oil preferred
Method
Drain the cottage cheese thoroughly using a fine mesh strainer.
Mix the cheese mixture in a bowl by combining the drained cottage cheese, mozzarella, parmesan, one beaten egg, garlic powder, salt, and pepper.
Chill the mixture in the refrigerator for 15 to 20 minutes.
Prepare a dredging station with flour mixed with seasoning, beaten eggs, and panko breadcrumbs mixed with Italian seasoning.
Shape the mixture into bite-sized balls, about 1 inch in diameter.
Coat each ball in flour, dip in beaten eggs, and coat with panko breadcrumbs.
Cook them in air fryer at 400°F for 8 to 10 minutes, bake at 425°F for 12 to 15 minutes, or pan-fry until golden brown.
Serve hot with your favorite dipping sauces.
