Preparation Steps
Pat dry the pork slices and gently pound them with a meat mallet until tender.
Whisk together the egg, cornstarch, Shaoxing wine, and salt. Add the pork to the mixture and marinate for 30 minutes.
In a bowl, combine the sauce ingredients: tomato ketchup, plum sauce, chili sauce, sweet bean sauce, Worcestershire sauce, black vinegar, sugar, and water.
In a wok or deep pan, heat up the oil to 350°F (175°C). Add the marinated pork slices, frying until golden brown and crispy, about 5-7 minutes.
Remove the pork from the oil and drain any excess grease. Add the mixed sauce into the wok and bring to a gentle boil. Toss in the fried pork until coated.
Plate the Peking Pork Chops and garnish with toasted sesame seeds.
