Instructions
 

Preparation

  • Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  • Slice sweet potatoes into even ¼-inch thick rounds to ensure uniform cooking.
  • In a large bowl, toss sweet potato rounds with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  • Arrange rounds in a single layer on the prepared baking sheet without overlapping.
  • Roast for 20 minutes, then flip each round and roast an additional 10–15 minutes until golden brown and crispy on the edges.
  • Remove from oven and immediately drizzle lightly with honey.
  • Sprinkle crumbled feta evenly over the warm sweet potatoes.
  • Garnish with fresh thyme, rosemary, and optional red pepper flakes.
  • Serve warm as an appetizer, side dish, or holiday party snack.

Notes

For extra crispiness, avoid overcrowding the pan and use convection setting if available. Add feta after roasting to prevent excessive browning. These can be pre-roasted and reheated at 375°F for 8–10 minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
