This delicious Crock Pot Corn Casserole is made with Jiffy corn muffin mix and canned sweet corn, making it a perfect holiday side dish.

  • 4-quart casserole slow cooker

Ingredients
  

  • 2 boxes corn muffin mix
  • 2 cans cream-style sweet corn
  • 2 cans whole kernel sweet corn drained
  • ¼ cup salted butter melted
  • 2 large eggs beaten
  • 1 cup milk
  • cup honey or sugar
  • 1 cup sour cream (8 ounces)

Instructions
 

  • In a large mixing bowl combine all of the ingredients. Mix thoroughly.
  • Spray 3.5 quart casserole crock pot (or a 4 quart oval crock pot) with nonstick cooking spray. Pour batter into the prepared slow cooker.
  • Cover and cook on low for 4-6 hours.
  • Then serve!

Notes

Note: You can cook on high for 2-3 hours but be careful and keep an eye so that it doesn't burn - some slow cookers run VERY hot when on high - especially newer ones.
