- 1 cup dairy-free yogurt plain preferably a thicker Greek-style yogurt
- ½ medium cucumber around ½ cup, finely grated
- 1 tablespoon lemon juice freshly squeezed
- ½ tablespoon olive oil extra virgin
- 1 teaspoon garlic powder or 1 garlic clove, minced/grated
- ¼ teaspoon salt more to taste
- ¼ cup dill fresh, finely chopped, add more if desired
Finely grate cucumber using a food grater and squeeze out the excess water. Place the grated cucumber on a paper towel and fold over to squeeze out more excess water.
In a bowl, mix together the grated cucumber, dairy-free yogurt, lemon juice, olive oil, garlic powder or fresh garlic, salt, and chopped dill. Add more salt to taste, if needed.
Serve right away or chill until ready to use. Store in the fridge, in a tightly sealed container for 3-4 days.
