Ingredients
  

  • 1 cup dairy-free yogurt plain preferably a thicker Greek-style yogurt
  • ½ medium cucumber around ½ cup, finely grated
  • 1 tablespoon lemon juice freshly squeezed
  • ½ tablespoon olive oil extra virgin
  • 1 teaspoon garlic powder or 1 garlic clove, minced/grated
  • ¼ teaspoon salt more to taste
  • ¼ cup dill fresh, finely chopped, add more if desired

Instructions
 

  • Finely grate cucumber using a food grater and squeeze out the excess water. Place the grated cucumber on a paper towel and fold over to squeeze out more excess water.
  • In a bowl, mix together the grated cucumber, dairy-free yogurt, lemon juice, olive oil, garlic powder or fresh garlic, salt, and chopped dill. Add more salt to taste, if needed.
  • Serve right away or chill until ready to use. Store in the fridge, in a tightly sealed container for 3-4 days.
