Squash & Seasoning

  • 2 medium Delicata squash about 2 pounds each
  • ¼ cup Olive oil
  • ½ tablespoon Garlic powder optional, but highly recommended for flavor!
  • ¾ teaspoon Sea salt
  • ¼ teaspoon Black pepper

Instructions
 

Preparation and Cooking

  • Preheat your oven to 425°F (218°C) and prepare a baking sheet.
  • Trim off both ends of each delicata squash and slice in half lengthwise.
  • Scoop out the seeds and slice each half into 1-inch thick half-moon shapes.
  • Spread squash slices on the baking sheet, drizzle with olive oil, and season with garlic powder, sea salt, and black pepper.
  • Roast in the oven for about 25 to 30 minutes, flipping halfway through, until tender and caramelized.
