Ingredients
  

Double Peach Cobbler Crust

  • 2.5 cups all purpose flour plus more for rolling
  • 1 Tablespoon white sugar
  • 0.5 Teaspoon salt
  • 12 Tablespoons cold butter cut into small pieces
  • 4-6 Tablespoons ice water

Peach Filling

  • 4 Tablespoons butter
  • 0.25 cups light brown sugar
  • 0.25 cups granulated sugar more for sprinkling on top
  • 1 Teaspoon vanilla
  • 0.5 teaspoon cinnamon
  • 1 piece lemon zest of
  • 0.5 cups water
  • 10 pieces ripe peaches peeled, pitted and sliced
  • 3 Tablespoons all purpose flour
  • 2 Tablespoons cream for brushing top crust

Instructions
 

Preparation

  • In a food processor, combine flour, sugar, and salt. Process for about 5 seconds.
  • Add cold butter pieces and process until the mixture resembles coarse meal.
  • Add ice water, 2 Tablespoons at a time, until the dough comes together.
  • Turn the dough onto a floured surface and knead gently. Divide into two disks, wrap in plastic, and refrigerate for 30 minutes.
  • Roll each disk into a rectangle to fit a 9x13 inch baking pan. Refrigerate rolled dough on parchment-lined baking sheets.

Peach Filling

  • In a sauté pan, melt butter. Add both sugars, water, lemon zest, vanilla, and cinnamon. Cook until dissolved.
  • Drain peaches and add to the sauté pan with flour. Cook until thickened and boiling, then remove from heat.
  • Assemble the cobbler by layering the peach filling in the baking pan and covering it with rolled crust.

Notes

Serve warm with ice cream or a drizzle of cream for extra richness.
