Ingredients
  

  • 4 medium-large fresh peaches, ripe but slightly firm
  • 1 tablespoon salted butter
  • 2 tablespoons pure maple syrup
  • ½ teaspoon ground cinnamon
  • ¾ teaspoon vanilla bean paste or vanilla extract ½ teaspoon if using extract

Instructions
 

  • Preheat oven to 350°F.
  • Slice your peaches (not too thin) and place them in a baking dish. I used a 9.5-inch round baking dish. An 8×8 or 9×9 will also work.
  • Combine melted butter, syrup, cinnamon, and vanilla. Pour over the peaches and stir gently to combine.
  • Bake for 20-30 minutes, until the juices are bubbling and the peaches have softened but are still holding their shape.
  • Cool at room temperature for about 15 minutes, this allows the juices to thicken a bit. Serve warm.

Notes

Store tightly covered in the refrigerator for up to 3 days. Serve for breakfast or dessert with various accompaniments.
