For the Sushi Bake
- 1.5 cups Sushi Rice cooked
- 1.5 pounds Salmon cooked
- 0.5 cup Low Sodium Soy Sauce or Coconut Aminos
- 2 tablespoons Toasted Sesame Oil
- 3 tablespoons Kewpie Mayo
- 1 tablespoon Sriracha or more, if you prefer it spicier!
- 1 tablespoon Rice Vinegar
- 1 8 ounce Cream Cheese container
- 1 bunch Green Onions chopped
- 0.25 cup Furikake Seasoning
For Serving
- Nori Squares
- Tortilla Chips
Preparation
Prepare the rice according to package instructions. Then, set it aside.
Line a baking sheet with parchment paper and place the salmon filet in the center of it. Broil for 8 minutes or bake at 375 for 15-18 minutes.
Allow the salmon to cool, then use a fork to shred it, removing the skin.
Mix the shredded salmon with soy sauce, sesame oil, kewpie mayo, sriracha, rice vinegar, cream cheese, green onions, and furikake until fully combined.
Preheat your oven to 400 F.
Press the rice into an even layer in an 8x8 or 9x11 baking dish.
Add the salmon mixture on top and spread it evenly. Sprinkle with more furikake seasoning.
Bake for 10 minutes, then broil for another 2-3 minutes.
Remove from the oven and serve immediately with tortilla chips or squares of nori.
