- 1 tablespoon Vegetable Oil Or use sesame oil.
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 0.25 cup Fresh Cilantro Optional garnish.
Coconut Rice
- 1 cup Jasmine Rice Basmati or long-grain can be used.
- 1 cup Coconut Milk Light coconut milk for lower calories.
- 1 cup Water
- 0.5 teaspoon Salt
- 1 teaspoon Sugar Optional.
Cooking Instructions
In a medium pot, combine jasmine rice, coconut milk, water, salt, and sugar (if using). Bring to a boil, then reduce heat and let it simmer for 15-20 minutes until the rice is tender and fluffy.
In a bowl, mix together the fresh ginger, garlic, lime juice, lime zest, soy sauce, honey, vegetable oil, salt, and pepper. Add the pork strips, ensuring they’re well-coated, and marinate for at least 10 minutes.
Heat a large pan over medium heat and cook the marinated pork for 5-7 minutes, or until the pork is browned and cooked through, reaching an internal temperature of 145°F.
Fluff the coconut rice with a fork and plate it up. Top with the ginger lime pork, and sprinkle fresh cilantro on top for color and flavor.
