Ingredients
  

Pork Marinade

  • 1 pound Pork Tenderloin/Chops Swap for chicken or tofu if desired.
  • 1 tablespoon Fresh Ginger Grated for best flavor.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Lime Juice Fresh is best.
  • 1 teaspoon Lime Zest
  • 3 tablespoons Soy Sauce Use low-sodium or tamari for gluten-free.
  • 1 tablespoon Honey Agave syrup can substitute for vegan option.
  • 1 tablespoon Vegetable Oil Or use sesame oil.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 0.25 cup Fresh Cilantro Optional garnish.

Coconut Rice

  • 1 cup Jasmine Rice Basmati or long-grain can be used.
  • 1 cup Coconut Milk Light coconut milk for lower calories.
  • 1 cup Water
  • 0.5 teaspoon Salt
  • 1 teaspoon Sugar Optional.

Cooking Instructions

  • In a medium pot, combine jasmine rice, coconut milk, water, salt, and sugar (if using). Bring to a boil, then reduce heat and let it simmer for 15-20 minutes until the rice is tender and fluffy.
  • In a bowl, mix together the fresh ginger, garlic, lime juice, lime zest, soy sauce, honey, vegetable oil, salt, and pepper. Add the pork strips, ensuring they’re well-coated, and marinate for at least 10 minutes.
  • Heat a large pan over medium heat and cook the marinated pork for 5-7 minutes, or until the pork is browned and cooked through, reaching an internal temperature of 145°F.
  • Fluff the coconut rice with a fork and plate it up. Top with the ginger lime pork, and sprinkle fresh cilantro on top for color and flavor.
