For the Cookies
- 1 cup unsalted butter softened
- 1 cup brown sugar packed
- ½ cup granulated sugar
- 2 large eggs or flaxseed egg
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
- 3 cups old-fashioned oats
- ½ cup molasses
For the Cream Filling
- ½ cup unsalted butter softened
- 1 cup powdered sugar
- ¼ cup heavy cream
- 1 teaspoon vanilla extract
Preparation
Cream the softened unsalted butter with brown sugar and granulated sugar until light and fluffy.
Add the eggs and vanilla extract one by one, mixing until well combined.
In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, cloves, salt, and oats.
Gradually combine the dry mixture with the wet ingredients and add the molasses to create dough.
Preheat oven to 350°F (175°C). Scoop dough onto baking sheets and bake for 10-12 minutes.
Beat together the filling ingredients in a clean bowl until light and fluffy.
