Ingredients
  

For the Cookies

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs or flaxseed egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • 3 cups old-fashioned oats
  • ½ cup molasses

For the Cream Filling

  • ½ cup unsalted butter softened
  • 1 cup powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract

Preparation

  • Cream the softened unsalted butter with brown sugar and granulated sugar until light and fluffy.
  • Add the eggs and vanilla extract one by one, mixing until well combined.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, cloves, salt, and oats.
  • Gradually combine the dry mixture with the wet ingredients and add the molasses to create dough.
  • Preheat oven to 350°F (175°C). Scoop dough onto baking sheets and bake for 10-12 minutes.
  • Beat together the filling ingredients in a clean bowl until light and fluffy.
  • Spread cream filling on one cookie and sandwich with another.
  • Enjoy fresh with a hot beverage or store for later.
