Ingredients
  

  • ¼ cup cooking oil
  • ¼ cup maple syrup
  • cup sugar
  • 2 large eggs
  • 3 bananas mashed Be sure to use ripe bananas.
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 1 cup chocolate chips plus more for sprinkling on top

Instructions
 

  • Preheat the oven to 350 degrees F and spray the bottom of a 9 x 5 inch loaf pan with cooking spray; set aside.
  • In a medium bowl, stir together the cooking oil, maple syrup, sugar, eggs, mashed bananas, and vanilla.
  • In another bowl, whisk together the salt, cinnamon, baking soda, baking powder, and flour.
  • Make a well in the center of the dry ingredients and add the egg and banana mixture. Stir until the batter is just moistened. Fold in the chocolate chips.
  • Transfer the batter to the prepared loaf pan and bake in the preheated oven for 50 to 55 minutes or until a toothpick inserted in the middle of the bread comes out mostly clean.
  • Let cool in the pan for 10 minutes before using a sharp knife to loosen the bread from the sides of the pan.
  • Invert the bread and let cool completely on a metal cooling rack.

Notes

Be sure to use ripe bananas as they make the very best banana bread!
