Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • ½ cup honey
  • ¼ cup balsamic vinegar
  • 1 cup fresh or dried cranberries
  • ½ cup crumbled feta cheese
  • 1 teaspoon dried thyme or rosemary
  • Fresh parsley for garnish (optional)

Instructions
 

  • Preheat Oven: Set your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  • Season Chicken: Pat chicken dry and season both sides with salt and pepper.
  • Mix Glaze: Whisk together honey, balsamic vinegar, and thyme in a small bowl.
  • Assemble Dish: Place chicken in baking dish and pour glaze over the top.
  • Add Cranberries: Scatter cranberries evenly over the chicken.
  • Bake Covered: Cover dish with foil and bake for 20 minutes.
  • Finish Baking: Remove foil and bake uncovered for 15–20 more minutes until fully cooked.
  • Add Feta: Sprinkle feta cheese and bake for 5 more minutes.
  • Optional Broil: Broil for 2–3 minutes until bubbly and golden.
  • Garnish: Top with parsley and serve hot.

Notes

Best served with fresh greens or quinoa. Stores up to 4 days in the fridge or 2 months in the freezer. Reheat at 350°F for 10–15 minutes.
