Ingredients
  

Potatoes

  • 1.5 pounds baby potatoes or potatoes cut into 1.5 inch cubes
  • 2 tablespoons olive oil or butter
  • ¼ cup honey
  • 2 tablespoons dijon mustard
  • 2 tablespoons grainy mustard
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic chopped
  • ¼ teaspoon paprika
  • salt to taste
  • pepper to taste

Cooking Instructions

  • Cover the potatoes in water in a large pot, bring to a boil and cook until just tender, about 10 minutes, before draining.
  • Heat the oil in a large skillet/pan over medium heat, add the potatoes and cook until golden brown, about 10 minutes.
  • Add the mixture of the honey, mustards, vinegar, garlic, salt, and pepper, toss to coat and cook for 2-3 minutes before enjoying!

Notes

Optionally, parboil the potatoes a day ahead of time. You can use your favourite mustard(s), vinegar, and seasonings as well.
