For the Pork

For the Potatoes
- 4 medium Yukon Gold or Russet Potatoes
For the Topping

Preparation
Preheat your oven to 375°F (190°C) to get it ready for baking your delicious casserole.
Season the pork chops with salt, pepper, garlic powder, onion powder, and paprika. Sear them in olive oil for 2-3 minutes per side until golden brown.
Caramelize sliced onions in the same skillet by melting butter for about 5 minutes. Stir in fresh garlic and let it cook for another minute.
Whisk in flour and cook for 1-2 minutes, then gradually stir in milk, chicken broth, and heavy cream. Cook until thickened and season to taste.
Layer half of the sliced potatoes in the skillet, pour half of the creamy sauce over them, and sprinkle half of the cheese. Repeat with remaining ingredients.
Place the seared pork chops on top and cover with foil.
Bake for 45 minutes covered, then uncover and bake for an additional 20-25 minutes until tender and golden.
Rest the casserole for 10 minutes before serving; garnish with fresh parsley.
