Ingredients
  

For the Spicy Dipping Sauce

  • 1 tablespoon soy sauce
  • 0.5 tablespoon rice vinegar (unseasoned)
  • 1 teaspoon green onions/scallions (thinly sliced)
  • 0.25 teaspoon gochugaru (Korean pepper flakes)
  • 0.25 teaspoon toasted white and black sesame seeds
  • 0.125 teaspoon sugar (optional) to counter the vinegar's acidity

For the Pancake

  • 1 bunch green onions/scallions about 10 stalks
  • 0.5 large egg beaten
  • 1.5 tablespoon neutral oil
  • 4 oz shrimp cleaned and deveined

For the Batter

  • 0.5 cup cake flour
  • 0.5 teaspoon Diamond Crystal kosher salt
  • 0.5 cup cold water or sparkling water add slowly as you check the consistency

Instructions
 

Preparation

  • Gather all the ingredients. Weigh your ingredients using a kitchen scale if possible.
  • Combine all the ingredients for the spicy dipping sauce and set aside.
  • Cut off the ends of the green onions and cut them in half crosswise.
  • Beat the egg in a small bowl and set aside half an egg for cooking.
  • Combine the cake flour and salt in a bowl. Slowly add water and whisk until just combined.

Cooking

  • Heat a nonstick frying pan over medium-high heat and add neutral oil.
  • Spread out the scallions in the pan and add the shrimp on top.
  • Drizzle the batter on top to cover the scallions and shrimp evenly.
  • Lightly drizzle the beaten egg over the batter.
  • Cook for about 3 minutes until the edges are crispy. Flip and cook for another 3 minutes.
  • Transfer the pancake to a cutting board and cut into small pieces.

Notes

You can keep leftovers in an airtight container and store in the refrigerator for up to 4 days.
