  • 4 pieces boneless, skinless chicken breasts
  • 1 whole lemon, sliced
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 cup cherry tomatoes
  • 1 whole red onion, sliced
  • Fresh parsley for garnish

Preparation

  • Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
  • Place chicken breasts on the sheet pan. Drizzle with olive oil and season with garlic, oregano, salt, and pepper.
  • Arrange lemon slices, cherry tomatoes, and red onion around the chicken. Sprinkle feta cheese over everything.
  • Bake for 25-30 minutes, until chicken is cooked through and vegetables are tender.
  • Garnish with fresh parsley before serving.
