Ingredients
  

  • 1.5 pounds fresh green beans ends trimmed
  • 4 strips bacon chopped
  • 1 medium yellow or sweet onion diced
  • 1 teaspoon soy sauce
  • cup dried cranberries
  • ¼ cup maple syrup
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Bring a large pot of salted water to a boil. Add green beans and cook for 6 to 10 minutes, depending on how soft you want them. Drain and place in a large bowl of ice water.
  • Cook bacon in a large nonstick skillet until crispy. Remove with a slotted spoon and place on a paper towel-lined plate.
  • Cook the onion in the bacon grease until soft, about 3 to 5 minutes.
  • Add the soy sauce, cranberries, maple syrup, salt and pepper to the skillet. Add the green beans and stir to coat the green beans.
  • Transfer to a bowl or serving platter and sprinkle with bacon.

Notes

You can skip the ice water step, but it helps keep the green beans' bright color.
