  • 0.5 cup green lentils, cooked and cooled
  • 4 cups carrots, shredded
  • 4 green onions, chopped
  • 0.25 cup cilantro leaves, chopped
  • 4 leaves Tuscan kale, thinly sliced
  • 0.5 cup golden raisins
  • 0.25 cup pistachios, chopped
  • 2 tablespoon sesame seeds

Moroccan Spiced Citrus Vinaigrette Ingredients

  • 0.33 cup orange juice
  • 2 tablespoon olive oil or aquafaba
  • 1 unit lime, zested and juiced
  • 3 tablespoon rice vinegar
  • 2 tablespoon maple syrup
  • 1 tablespoon coconut aminos
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon cinnamon

Preparation Instructions

  • Add all ingredients for salad to a large bowl.
  • Combine the ingredients for the dressing in a jar and whisk to combine with a fork. Season to taste.
  • Pour the dressing over the salad and toss to combine. This can be prepared and stored in the fridge for up to 4 days, and is actually even better the second day!
