Ingredients
  

For the Crust

  • 1 cup Graham Cracker Crumbs Consider using chocolate sandwich cookies for a delicious twist.
  • 4 tablespoons Unsalted Butter Melted for best consistency.
  • ¼ cup Granulated Sugar Coconut sugar can be a healthier alternative.

For the Filling

  • 8 oz Cream Cheese Ensure it's softened to prevent lumps.
  • ½ cup Powdered Sugar Avoid granulated for a silky texture.
  • 1 teaspoon Pure Vanilla Extract Almond extract can be a delightful substitute.
  • 1 tablespoon Lemon Juice Helps set the cheesecake.
  • 1 cup Heavy Whipping Cream Make sure it’s chilled for optimal whipping.

For the Topping

  • 1 cup Fresh Berries Any seasonal berries or use fruit preserves.
  • ¼ cup Strawberry Glaze Optional; can be homemade or store-bought.

Preparation Steps

  • In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix well until you have a sandy texture, then firmly press this mixture into the bottom of a 9-inch springform pan for a solid base.
  • Place the crust in the freezer and let it chill for 15 minutes.
  • In a chilled mixing bowl, beat the heavy whipping cream until stiff peaks form—about 3-5 minutes.
  • In another bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy, about 2-3 minutes. Add in pure vanilla extract and lemon juice, mixing until well combined.
  • Carefully fold the whipped cream into the cream cheese mix, using a spatula to gently combine until no white streaks remain.
  • Pour the creamy filling over the chilled crust, using a spatula to smooth the top.
  • Cover the pan and refrigerate for at least six hours, preferably overnight.
  • Rinse and slice fresh berries for the topping and prepare the strawberry glaze if using.
  • Once set, carefully loosen the cheesecake from the sides of the pan and remove the springform latch.
  • Slice the cheesecake into 12 even pieces for clean cuts and serve chilled, garnished with fresh berries or strawberry glaze.

Notes

For best results, prepare the cheesecake a day in advance to allow it to fully set overnight.
