Cooking Instructions

  • Warm up the olive oil in a large pot or Dutch oven over medium heat. Toss in the chopped onion and sauté until softened and translucent, about 5-7 minutes.
  • Sprinkle in the minced garlic and dried Italian seasoning, cooking for another minute. Stir continuously until fragrant.
  • Introduce the uncooked long-grain rice to the pot, stirring to coat each grain with the oil and flavors. Cook for 2-3 minutes.
  • Pour the vegetable broth into the pot, then add the diced zucchini. Stir everything together until well mixed.
  • Bring the mixture to a gentle boil. Once bubbling, reduce the heat to low, cover tightly, and let it simmer for 18-20 minutes.
