Philly Cheesesteak Meatloaf

Ingredients
  

Vegetable Mixture

  • 1 teaspoon olive oil
  • 1 cup onion, diced
  • 1 cup green pepper, diced
  • 8 oz cremini or white mushrooms, chopped
  • 3 garlic cloves, minced
  • pinch salt
  • pinch pepper

Meatloaf Mixture

  • 2 lbs ground beef
  • 2 Tbs ketchup
  • 2 Tbs Worcestershire sauce
  • 2 eggs, beaten
  • 2 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1.33 cups plain panko bread crumbs
  • 6-8 oz Provolone cheese, sliced

Instructions
 

Preparation

  • Preheat the oven to 375 degrees. Grease loaf pans with oil, if using.
  • In a large skillet, heat oil and sauté onion and green pepper for 3-4 minutes, then add mushrooms and garlic. Cook for 1 more minute, remove from heat and let cool.
  • In a large bowl, combine beef, ketchup, Worcestershire sauce, eggs, salt, pepper, panko, and the cooled down vegetable mixture. Mix and shape into 2 loaves.
  • Place in pans or on a foil-lined baking sheet. Bake for 50-60 minutes. Broil for a few minutes for a browned top, then add cheese slices and return until melted.
  • Let cool for 10 minutes before slicing and serving.

Notes

This meatloaf makes 2 loaves and pairs perfectly with mashed potatoes.
