Ingredients
  

Fish

  • 2 fillets salmon 6 ounces each

Vegetables

  • 2 medium sweet potatoes peeled and diced into 1-inch cubes

Oils and Seasonings

  • 2 tablespoons olive oil
  • Salt to taste
  • black pepper to taste
  • 1 teaspoon dried rosemary
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

Instructions
 

  • Preheat your oven to 400°F. Toss the sweet potatoes with 1 tablespoon olive oil, salt, pepper, garlic powder, onion powder, and rosemary. Spread them on a baking sheet.
  • Bake in the preheated oven for 15 minutes until they begin to soften.
  • While potatoes cook, drizzle the salmon fillets with the remaining 1 tablespoon olive oil and season with salt and black pepper.
  • Remove the baking sheet from the oven, push the sweet potatoes to one side, and place the salmon fillets on the other side of the sheet.
  • Return to the oven and bake for 10-15 more minutes, or until the salmon is cooked through and flakes easily with a fork.
