Method

  • Preheat the oven to 375°F (190°C) and prepare a muffin tin by greasing or lining it with paper liners.
  • In a large mixing bowl, whisk together the all-purpose flour, ground flaxseed, baking powder, salt, garlic powder, and red pepper flakes until combined.
  • In a separate bowl, whisk together the plain Greek yogurt and room temperature eggs until smooth and creamy.
  • Gently fold the wet mixture into the dry ingredients, mixing just until combined.
  • Stir in the wilted spinach, chopped chives, and 1 cup of cheddar cheese until evenly distributed.
  • Divide the batter evenly among the muffin cups and sprinkle a little reserved cheddar cheese on top.
  • Bake for 20-22 minutes until golden brown and a toothpick inserts cleanly.
  • Allow the biscuits to cool slightly in the tin before serving.
