  • 2 pounds Beef Shank Choose cuts with marrow for extra richness.
  • 10 cups Water Essential for the broth.
  • 1 large White Onion Sweet onion can be a nice substitute.
  • 4 cloves Garlic Adjust quantity for desired intensity.
  • 1 tablespoon Black Peppercorns Using whole ones gives subtler spice.
  • 2 pieces Bay Leaves Omit if you prefer a simpler taste.

For Seasoning

  • 3 tablespoons Fish Sauce Replace with soy sauce for a non-seafood option.
  • 1 teaspoon Sea Salt Taste as you go.

For the Veggies

  • 1 cup Sweet Corn Frozen can be used if fresh isn't available.
  • 2 medium Potatoes Sweet potatoes can bring a nice twist.
  • 2 medium Carrots Feel free to swap with other root vegetables.
  • 2 cups Green Cabbage Bok choy makes a great alternative.
  • 1 cup Pak Choi Substitute with spinach for variety.

Instructions
 

Cooking Steps

  • Rinse the beef shank under cold water and pat it dry with paper towels.
  • Boil the beef shank in a large pot of water for about 10 minutes, then discard the water and rinse the meat again.
  • Return the cleaned beef to the pot and add enough water to cover it. Add the sliced onion, minced garlic, black peppercorns, and bay leaves. Bring to a boil, then reduce the heat and let it simmer.
  • Cover the pot and let it simmer for 2 to 2.5 hours, or until the beef is tender.
  • Season the broth with fish sauce and sea salt, tasting as you go.
  • Add sweet corn, diced potatoes, and sliced carrots. Simmer for an additional 20 minutes.
  • Stir in chopped cabbage and pak choi, cooking for another 5-7 minutes.
  • Taste the final broth and adjust seasoning before serving hot.
