For the Stir-Fry
- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 1 inch ginger, fresh, grated
- 1 tablespoon soy sauce, low-sodium optional
- 1 tablespoon olive oil
- 1 teaspoon sesame oil for finishing touch

Preparation
Gather and chop all your shrimp, asparagus, mushrooms, garlic, and ginger.
In a large skillet or wok, heat a tablespoon of olive oil over medium-high heat.
Add the peeled and deveined shrimp to the hot pan. Sauté for 2-3 minutes until they turn pink and opaque.
In the same pan, toss in minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
Stir in the trimmed asparagus and sliced mushrooms. Cook for 5-6 minutes.
Return the sautéed shrimp to the pan, add soy sauce and a splash of sesame oil. Stir and heat for an additional 1-2 minutes.
Before serving, sprinkle with black pepper to taste.
