Ingredients
  

For the Stir-Fry

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 8 ounces mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, fresh, grated
  • 1 tablespoon soy sauce, low-sodium optional
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil for finishing touch
  • to taste black pepper

Instructions
 

Preparation

  • Gather and chop all your shrimp, asparagus, mushrooms, garlic, and ginger.
  • In a large skillet or wok, heat a tablespoon of olive oil over medium-high heat.
  • Add the peeled and deveined shrimp to the hot pan. Sauté for 2-3 minutes until they turn pink and opaque.
  • In the same pan, toss in minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  • Stir in the trimmed asparagus and sliced mushrooms. Cook for 5-6 minutes.
  • Return the sautéed shrimp to the pan, add soy sauce and a splash of sesame oil. Stir and heat for an additional 1-2 minutes.
  • Before serving, sprinkle with black pepper to taste.
