Ingredients
  

Chicken Base

  • 3 breasts boneless skinless chicken about 1½ lbs
  • 1.33 cups chicken broth
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 10.5 oz cream of chicken soup see link
  • 10.5 oz cream of celery soup
  • 2 stalks celery finely chopped

For Stuffing

  • 2 boxes Stovetop stuffing mix 6 oz each
  • 6 tablespoon salted butter melted

Instructions
 

Preparation

  • If the 3 chicken breasts are extra thick, slice them in half horizontally so they cook evenly and shred easily later.
  • Place the chicken breasts in an even layer in the slow cooker.
  • Pour in 1 can chicken broth over the chicken. Sprinkle in ½ teaspoon Italian seasoning, ½ teaspoon black pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Add 2 finely chopped celery stalks over the top.
  • Spread 1 can cream of chicken soup and 1 can cream of celery soup evenly over the chicken.
  • Cover and cook on LOW for 5 hours, or HIGH for 3 hours. The chicken should be very tender and easy to shred.
  • Remove the chicken from the slow cooker and shred or chop into bite-sized pieces. Return the chicken to the slow cooker and stir it into the sauce until fully coated.
  • Sprinkle both boxes (6 oz each) stovetop stuffing mix evenly over the chicken mixture. Drizzle 6 tablespoon melted butter evenly over the stuffing. Gently press into liquid but do not mix.
  • Cover and cook for 10 minutes, until the stuffing is soft and fluffy.
  • Serve immediately, scooping chicken, stuffing, and sauce together.

Notes

Slice thick chicken breasts in half so they cook evenly and shred easily. Always add stuffing at the end to prevent it from becoming mushy. Keep the stuffing on top and do not stir so it stays fluffy. Serve right away for the best texture.
