Preparation

  • In a medium bowl, whisk together honey, Dijon mustard, whole grain mustard, chicken broth, apple cider vinegar, garlic powder, onion powder, paprika, salt, and pepper until well combined.
  • Place the chicken breasts evenly in the slow cooker insert, making sure they are laid out in a single layer for even cooking.
  • Pour the prepared honey mustard sauce over the chicken breasts, ensuring each piece is thoroughly coated with the mixture.

Cooking

  • Cover the slow cooker with its lid and cook on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken is fully cooked through and fork-tender.
  • About 30 minutes before the cooking time ends, mix cornstarch and water in a small bowl to create a slurry. Stir this slurry into the slow cooker to thicken the sauce as it finishes cooking.
  • Once cooked, serve the chicken hot with the thickened honey mustard sauce spooned over the top. Garnish with freshly chopped parsley if desired for a fresh touch.

Notes

For extra flavor, marinate the chicken breasts in the honey mustard sauce for 1 hour before cooking if time permits. You can substitute chicken thighs for a juicier result; adjust cooking time as needed. Serve with rice, mashed potatoes, or steamed vegetables to complete the meal.
