Chicken and Sauce Base
- 1 pound boneless skinless chicken breasts, cubed 1-inch cubes
- 2 teaspoons minced garlic 2 cloves
- ⅔ cup peanut butter
- 1 cup chicken broth
- 1 cup shredded zucchini
- ⅓ cup soy sauce
- 1 teaspoon sugar
- 1 medium red pepper, sliced
Garnishes and Noodles
- 1 tablespoon lime juice
- ½ cup chopped cilantro more for garnish

- 12 ounces cooked and drained linguine noodles
Cooking Instructions
Add the chicken, garlic, peanut butter, chicken broth, zucchini, soy sauce, sugar, and red pepper into the slow cooker. Stir to combine.
Cook on LOW for 4-5 hours or on HIGH for 2-3 hours. 30 minutes before serving, add lime juice and chopped cilantro, then cook for the remaining 30 minutes.
Serve over cooked linguine noodles and garnish with chopped peanuts and cilantro.
