Ingredients
  

Chicken and Sauce Base

  • 1 pound boneless skinless chicken breasts, cubed 1-inch cubes
  • 2 teaspoons minced garlic 2 cloves
  • cup peanut butter
  • 1 cup chicken broth
  • 1 cup shredded zucchini
  • cup soy sauce
  • 1 teaspoon sugar
  • 1 medium red pepper, sliced

Garnishes and Noodles

  • 1 tablespoon lime juice
  • ½ cup chopped cilantro more for garnish
  • to taste chopped peanuts for garnish
  • 12 ounces cooked and drained linguine noodles

Instructions
 

Cooking Instructions

  • Add the chicken, garlic, peanut butter, chicken broth, zucchini, soy sauce, sugar, and red pepper into the slow cooker. Stir to combine.
  • Cook on LOW for 4-5 hours or on HIGH for 2-3 hours. 30 minutes before serving, add lime juice and chopped cilantro, then cook for the remaining 30 minutes.
  • Serve over cooked linguine noodles and garnish with chopped peanuts and cilantro.
