  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs room temperature
  • 2 teaspoons pure vanilla extract
  • 2 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¾ teaspoon salt
  • ½ cup rainbow sprinkles jimmies work best

Baking Instructions

  • Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  • In a large bowl, use an electric mixer to beat together the softened butter, granulated sugar, and brown sugar until light and fluffy—about 2-3 minutes.
  • Beat in the eggs, one at a time, followed by the vanilla extract. Scrape down the bowl as needed for even mixing.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients on low speed, mixing until just combined. Do not overmix.
  • Gently fold the sprinkles in using a spatula until evenly distributed.
  • Use a medium (about 2 tablespoon) cookie scoop or spoon to drop dough balls onto the prepared baking sheets, spacing about 2 inches apart.
  • Bake the cookies in preheated oven for 10-12 minutes, or until the edges are just set but the centers still look slightly soft and puffy.
  • Let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
