Dough Ingredients
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- ½ cup packed light brown sugar
- 2 large eggs room temperature
- 2 teaspoons pure vanilla extract
- 2 ¾ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¾ teaspoon salt
- ½ cup rainbow sprinkles jimmies work best
Baking Instructions
Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
In a large bowl, use an electric mixer to beat together the softened butter, granulated sugar, and brown sugar until light and fluffy—about 2-3 minutes.
Beat in the eggs, one at a time, followed by the vanilla extract. Scrape down the bowl as needed for even mixing.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients on low speed, mixing until just combined. Do not overmix.
Gently fold the sprinkles in using a spatula until evenly distributed.
Use a medium (about 2 tablespoon) cookie scoop or spoon to drop dough balls onto the prepared baking sheets, spacing about 2 inches apart.
Bake the cookies in preheated oven for 10-12 minutes, or until the edges are just set but the centers still look slightly soft and puffy.
Let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
