Ingredients
  

Pasta and Sauce

  • 1 lb fettuccine gluten-free if desired
  • 1 batch Vegan Cheese Sauce see recipe link
  • 12 oz vegan cream cheese
  • 6 cloves garlic divided
  • 1 big handful spinach
  • 8 oz mushrooms
  • salt to taste
  • pepper to taste
  • ½ cup nutritional yeast optional
  • 2 teaspoon garlic powder optional

Cooking Instructions

  • Cook your pasta according to the package directions.
  • While it’s cooking, prepare the vegan cheese sauce by blending cashews, vegetable broth, tahini, dairy free cream cheese, 3 of the 6 garlic cloves, and a pinch of salt and pepper.
  • Add optional nutritional yeast, garlic powder, and blend until smooth and creamy. Set aside.
  • Heat a skillet with a bit of oil or vegetable broth, add the remaining garlic cloves and mushrooms, and fry for around 4 minutes.
  • Add spinach and fry for 3 minutes more. Season with salt and pepper.
  • After draining the pasta, mix everything together and serve on plates or bowls.

Notes

This recipe is perfect for meal prep and can be enjoyed for lunch or dinner.
