Ingredients
  

For the Cake

  • 16 ounces strawberries, reduced
  • 0.5 cup vegetable oil
  • 3 tablespoons unsalted butter, melted
  • 3 large eggs
  • 0.5 cup sour cream
  • 2 teaspoons pure vanilla extract
  • 1.5 cups granulated sugar
  • 2.5 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup milk
  • pink food coloring* optional

For the Frosting

  • 1 ounce bag freeze-dried strawberries
  • 16 ounces full-fat cream cheese or mascarpone cheese, cold
  • 2.25 cups heavy whipping cream, cold
  • 2 teaspoons pure vanilla
  • 0.5 cup powdered sugar

Instructions
 

For the Cake

  • Rinse the berries and pulse in a food processor until pureed to about 2 cups of puree.
  • In a saucepan, cook the puree over medium-low heat until it thickens to ¾ cup (20-30 minutes). Cool to room temperature.
  • Preheat the oven to 350°F. Prepare three 8-inch baking pans with parchment paper.
  • In a mixing bowl, combine oil, butter, eggs, sour cream, and vanilla. Beat until combined.
  • Mix in sugar, then add strawberry puree and a few drops of pink food coloring, combining well.
  • Combine dry ingredients separately and alternate adding with milk. Stir until just combined.
  • Divide batter evenly between pans and bake for 18-20 minutes. Cool completely.

For the Frosting

  • Pulse freeze-dried strawberries into a fine powder.
  • Chill mixing bowl for 5-10 minutes. Beat cream cheese until smooth. Gradually add 1 cup heavy cream.
  • Add remaining heavy cream and beat until soft peaks form.
  • Mix in powdered strawberries, powdered sugar, and vanilla until stiff peaks form.

To Assemble and Decorate

  • Level the cake with a cake leveler and place the bottom layer on a cake board.
  • Pipe frosting on the leveled cake, then repeat with second layer, adding the final layer on top.
  • Use frosting to fill gaps and create a crumb coat, smoothing the excess frosting.
  • Reserve 1 ¼ cups frosting for decoration and use the rest for the sides, piping around the edge and smoothing.
  • Garnish with fresh strawberries.

Notes

The pink food coloring is optional. The strawberry puree can be made ahead of time and stored in the refrigerator. Let the cake cool completely before assembling and frosting.
