Ingredients
  

Fresh Ingredients

  • 2 cups arugula
  • 2 cups spinach
  • 1 large pomegranate seeded
  • 2 medium ripe pears sliced, Bartlett and Anjou work well
  • 3 small mandarin oranges peeled, often called 'cuties'
  • 0.5 cups walnuts whole or chopped
  • cup feta cheese

Dressing Ingredients

  • 1 tablespoon apple cider vinegar or 1-2 teaspoon lemon juice if you don't have ACV
  • 1.5 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon water
  • 1 teaspoon honey mustard or dijon if you prefer it

Instructions
 

Preparation

  • Make the dressing: Shake all dressing ingredients in a jar with the lid tightly secured, or whisk together in a small bowl until well combined.
  • Assemble: Toss all ingredients together in a large bowl. Add the dressing just before serving.
  • Serve & Store: Serve immediately once you've dressed the salad. Store leftovers in the fridge for 1-2 days.

Notes

This salad is so customizable! Swap walnuts for pecans if desired, and add more or less cheese according to your taste.
